We moved to the city and couldn't find longganisa that tasted like home — so we started making our own.

Five easy steps to the perfect longganisa
Take it out of the freezer about 10 minutes before cooking. Give it a quick rinse with water before putting it in the pan.
Place it in a pan and add water until about half the body of the longganisa is submerged. Cover and let it simmer on medium heat.
Once the water’s gone, prick with a fork to let the natural oils flow out.
Let it fry in its own oil until golden brown on all sides.
Best with garlic rice and a fried egg. The classic Ilocos breakfast.

Been craving Ilocos longganisa for so long, and it’s not easy to find a good one here in Metro Manila. Most options just don’t match what we usually get in Ilocos. This one though hits close to home. My husband loves the chunky garlic pieces. I like the big size. It’s even larger than the usual ones we buy in Ilocos. It’s also leaner, which makes it even better. Would definitely buy again!
